All-Bran Muffins

I figured it was time to get crackin’ and post a recipe. This is not complicated. You just need a big 6-cup Texas-size muffin pan, although a 12-cup muffin pan can be used. Nice for breakfast or when a couple of friends stop by for coffee or tea. Tastes great warm, and it’s fast to make.

2 cups All-Bran Optional: Craisins, raisins or other berries
1/2 cup sugar
1 Tblsp. baking powder
1/4 tsp. salt
1-1/4 cup flour
1-1/4 cup fat-free milk ( 2% is also OK)
1 egg
1/4 cup vegetable oil

Preheat oven to 400°F. Stir together flour, sugar, baking powder and salt. In a large bowl combine All-Bran and milk. (I like to add a handfull of Craisins (or other berries) for a different taste.) Let stand 5 minutes or until cereal softens. Add the egg and oil. Beat well. Add the flour mixture, stirring only until combined. Portion into a muffin pan which is coated with a vegetable cooking spray. Bake 20 minutes or until lightly browned.

  1. Excellent! I have one of those rubbery silicone mini-muffin pans. I’ll have to try this out.

  2. Yum! A friend always used to make fun of me for loving bran flakes, but really, they’re just so good! And muffins ala bran are even more delicious :) I’ll try these over the weekend…
